Matzah brei

“I am generally familiar with most foods, but I have never heard of this one.”

For the uninitiated, it may seem there is nothing special about this dish, and it’s true. Only 3 ingredients and some salt, thrown together in a pan. No aromatics, no special tricks. Matzah brei is simply fried matzah. Some like it savory. I like mine sweet with the addition of jam. This is the morning after passover meal of choice from my childhood. Got to use up that matzah somehow.

Matzah brei

servings: 4

  • 4 sheets of matzah
  • 4 eggs
  • 1/2 stick of butter
  • salt to taste
  • jam or powdered sugar to top it with
Preparation
Soak the matzah sheets under cold water for about 20 seconds and break up into large pieces. Whisk the eggs and a generous pinch of salt in a bowl. Heat the butter in a skillet and fry the matzah to crisp up before adding the eggs. Scramble together until the eggs are thoroughly cooked and serve hot with jam and powdered sugar.
